Braç de Gitano (SPONGE ROLL)
Sponge rolls are sponge cakes rolled and traditionally filled with custard, although it can also be filled with chocolate or whipped cream. In Catalan cuisine it is usually covered with confectioners sugar, though there are also variations with jam, egg yolk curd, meringue or chocolate.
100 gm sugar
100 gm flour
30 gm butter
Beat the egg yolks with the sugar until the mixture is thick and fine. Spread the flour just until well blended, do not over mix. Beat the egg whites until stiff and fold into the batter. Grease a baking pan with butter and pour the mixture without stirring. Bake at medium oven. Once baked, let cool a bit, fill with whipped cream, custard, jam and roll. Dust with confectioners sugar. It can be decorated with chocolate and walnuts.
