Esqueixada is a salad made with desalted minced cod and vegetables such as tomato, chopped or grated, onion, pepper, olives and olive oil. Finally, the dish can be completed with boiled egg, beans, or other ingredients to give it a special touch.
Leave the cod in water for two days. Bake the eggplants and peppers. Prepare in a serving plate the minced cod, the eggplants, the pepper, the tomatoes and the eggs. Season all the ingredients with oil, salt and vinegar.
