This is a very easy dish to prepare, tasty, healthy and with an attractive colourful look, as well as a nice velvety texture. Eaten with a slice of peasant bread, a slice of cured cheese and a glass of young red wine, it gives a simple yet pleasant combination.
1 garlic clove
Clean and place all the ingredients in a baking pan. Bake them in the oven until you see their colour changes and they are cooked inside. Then peel and slice in two the vegetables and season them with oil, salt, vinegar and pepper. The tomato is also seasoned with some garlic and parsley. Place it in a serving plate and it is ready to serve.
