COCA DE SAMFAINA (VEGETABLES PIE)
This is one of the most popular pies made in Catalonia. The regions around Lleida are where it has a bigger fame. Traditionally, the farms kept part of the bread dough to prepare this pie.
The dough is made with water, salt and flour, kneaded and the rolled out over a baking sheet as thin as possible. Then four pieces of herring, with the bones removed, are placed over the dough. Vegetables are chopped and seasoned with salt and pepper, and then placed over the dough. It is baked for about 20 minutes and then sprinkled with some oil drops to be ready to serve.
